This was a dessert that we had while we were traveling in New Zealand. We stayed at a cute little bed and breakfast and they had treats for the guests. We tried these and my husband told me that I HAD to recreate them! They were delicious! Anything with Biscoff Cookie Butter is delicious and these are no exception! We came home and I fulfilled my promise and recreated this recipe. The base is Biscoff Cookies. It has a delicious caramel layer on top that is thick and perfect. It is topped with a white chocolate layer mixed with cookie butter to make a delicious treat! It is perfection in every bite. The whole family loved them, and these will be made over and over in our future. I hope you love this treat as much as we do!

Ingredients:

Crust

2 c. Biscoff Cookie Crumbs

½ c. Melted Butter

Bake at 350°F for 8 minutes


Caramel

1 14 oz. can Sweetened Condensed Milk

2 Tbl. Butter

1/3 c. Brown Sugar

2 Tbl. Corn Syrup

2 tsp. Vanilla

Bake at 350°F for 10 minutes


Topping

2 c. White Chocolate Chips

1 c. Biscoff Cookie Butter

1 Tbl. Oil

Preparation:

1. Preheat the oven to 350°F.


2. Crush the Biscoff Cookies into crumbs. Then combine it with the Melted Butter and mix it well.  Line a square 9x9 glass baking dish with parchment paper. Then spray the parchment paper with cooking spray. Press the mixture into the bottom of the baking dish. Bake for 8 minutes. Remove from the oven.


3. In a saucepan combine the Sweetened Condensed Milk, Butter Corn Syrup, Brown Sugar, and the Vanilla. Turn it onto a medium heat. When it starts to boil, turn the heat down to medium-low heat. Let it boil for 5 minutes while stirring constantly. Remove from the heat and pour the caramel over the top of the crust.


4. Bake the caramel for 10 minutes. Remove from the oven and cool.


5. Melt the Chocolate Chips. Then stir in the Biscoff Cookie Butter and the Oil. Stir it until it is mixed well. Then pour it over the top of the caramel layer and spread it evenly.


6. Sprinkle some Biscoff Cookie Crumbs on the top of the chocolate.


7. Cool completely and let the chocolate harden. Then slice and serve. Enjoy!
