Chicken Enchilada Casserole
This is a delicious and simple way to make and enchilada-type meal for your family. You get all the yummy flavors of enchiladas without the tedious work of rolling all the tortillas! This makes a fast and easy meal that your family will love! This recipe has tons of yummy flavors in it. Also, if you are like my husband, he doesn’t love soggy tortillas, which means he doesn’t always love enchiladas. He loved this recipe and asked for seconds! I call this a huge win, because I have always loved them. This recipe is also pretty healthy. My kids all devoured it. I hope you love this recipe as much as we do!
Preparation:
1. Cut the Chicken and the Bell Peppers into bite-sized pieces.
2. Heat a large frying pan or pot. Add the Olive Oil and let it heat up. Then add the Chicken and the Bell Pepper and cook it until the chicken is cooked through and the pepper is soft.
3. Drain the extra liquid off. Add the Salsa, Black Beans, Cumin, and the Cream Cheese. Stir it together until it is mixed well.
4. Preheat the oven to 375°F.
5. Grease a 9x13 glass baking dish. Place 2 Tortillas on the bottom of the pan. Then add half of the Chicken mixture and spread it out evenly. Then sprinkle with 2 c. Shredded Cheese. Add 2 more Tortillas on top. Then spread out the remaining Chicken mixture on top of the tortillas. Place 2 more Torillas on top. Then sprinkle the remaining Cheese on top.
6. Bake for 25 minutes, or until heated through and the cheese is bubbly.
7. Serve and enjoy!
