This is a delicious summer or fall salad. I love any kind of coleslaw and this is a fun variation that has tons of flavor and is simple to make. This recipe is one of my absolute favorite pasta salads. I usually only make it for special occasions because I want to eat the whole salad myself. I love to take this to potlucks or a backyard barbeque. It has crispy pieces of chicken tenders mixed with a sweet and salty pasta salad. When you look at the ingredients, you might wonder how it might taste because they don’t seem to go together, but trust me. It is amazing! I received this recipe from my grandma. I made a couple slight tweaks to it, but it is generally her recipe. I hope you love this recipe as much as I do! This recipe makes a huge salad. I usually cut it in half when I make it.

Ingredients:

12 oz. Bow-tie Pasta

12 oz. Spiral colored Pasta

4 c. Chopped Celery

6 Green Onions

2- 25 oz. packages frozen Chicken Strips

2- 20 oz. cans Pineapple Tidbits, drained

1 bag Red Grapes

2 c. Cashews

1 c. Mayonnaise

1- 16 oz. bottle Kraft Coleslaw Dressing

Preparation:

1. Cook the Bow-tie pasta and the spiral pasta according to package directions. Drain and let it cool completely and place it in a large mixing bowl.

2. Chop the Celery and the Green Onions into small pieces. Add them to the pasta.

3. Cook the Chicken Tenders until they are crispy. I like to do it in the Air Fryer, but you can also do it in the oven. Chop them and add them to the salad.

4. Add the Pineapple, Grapes, and the Cashews. Toss them together.

5. Add the Mayonnaise and the Coleslaw Dressing. Stir until it is mixed in well.

6. Serve and enjoy!
