
This is a recipe that I have had for years. It is one of those that I make for a potluck, and when I do it is always a huge hit! Who doesn’t love Chocolate Chip Cookies and Cheesecake? When you mix both of them together it is amazing! This recipe is fairly simple to make, and difficult to get wrong. A lot of people feel intimidated by making a cheesecake, but this is something that anyone can make. And maybe it will increase your confidence to try making a cheesecake in the future. Or maybe your are already a pro, and will just love this recipe.
Ingredients:
Cookie Dough
¾ c. Salted Butter
1/3 c. Brown Sugar
¾ c. Sugar
1 Egg
1 ½ tsp. Vanilla
1 tsp. Salt
¾ tsp. Baking Soda
1 ½ c. Flour
1 ½ c. Chocolate Chips
¾ c. Chopped Pecans
Bake at 350°F for 8 min.
Cheesecake
2 8 oz. Cream Cheese
¾ c. Sugar
2 Eggs
1 tsp. Vanilla
Bake at 350°F for 35-40 min.
Preparation:
1. Preheat the oven to 350°F.
2. In a medium mixing bowl, combine the Butter, Sugar, and Brown Sugar. Cream them together until they are nice and creamy.
3. Add the Egg and Vanilla and mix well.
4. Add the Baking Soda and the Salt. Mix well. Then add the Flour and mix it well.
5. Add the Chocolate Chips and the Chopped Pecans to the cookie dough and mix well.
6. Grease a 9x13 glass baking dish. Spread 2/3 of the cookie dough in the bottom of the pan. Spread it evenly, and then bake it for 8 minutes. Leave the remaining cookie dough in the bowl to be used later. Here is a link to one that I use and love!
7. While the dough is baking, in a small mixing bowl, beat the Cream Cheese and the Sugar until it is smooth and creamy.
8. Add the Eggs and the Vanilla and mix it well.
9. When the cookie dough is done baking, spread the cream cheese mixture over the top and spread it out evenly.
10. Drop the remaining cookie dough by spoonful’s onto the cream cheese mixture. You will not spread it out like you did the cream cheese. It needs to be in globs that are put throughout the pan. See the picture to see what I mean.
11. Bake at 350° for 35-40 minutes, or until golden brown. Cool completely. Refrigerate.
12. Serve and enjoy!
