When I was growing up my mom made apple muffins all the time. I hated them with a passion. I used to hate any kind of cooked apples and although I grew out of my dislike of cooked apples, I still never loved that recipe. I decided that I would try making apple muffins again, but make up my own recipe. That was one of the best things I have done because now I love apple muffins and so do my kids! This recipe is simple and easy, but it is so delicious! They are soft and moist without being gooey from the cooked apples. They have a delicious cinnamon flavor to go along with the apples and when they are cooking it makes the house smell amazing! I have found our permanent apple muffin recipe and we will continue to enjoy it for years to come. I hope that you love this recipe as much as we do!

Ingredients:

½ c. Salted Butter

1 c. Sugar

4 oz. Cream Cheese

2 Eggs

4 tsp. Baking Powder

½ tsp. Salt

5 tsp. Cinnamon

1 tsp. Nutmeg

1 tsp. Vanilla

1 c. Milk

2 ½ c. Flour

2 Apples

Bake at 375°F for 20-25 minutes

Preparation:

1. Preheat the oven to 375°F.


2. In a medium mixing bowl cream the Butter, Sugar, and the softened Cream Cheese.


3. Add the Eggs and mix it well.


4. Add the Baking Powder, Salt, Cinnamon, Nutmeg, and the Vanilla. Mix it well.


5. Add the Milk and the Flour and mix it well.


6. Peel and chop 2 Apples into small pieces. See the picture for an example. Slowly mix them into the batter.


7. Fill your muffin tins until they are almost full for a nice, full muffin.


8. Bake for 20-25 minutes.


9. Serve and enjoy!
