Cinnamon Peanut Butter Cookies

Cinnamon Peanut Butter Cookies

The combination of cinnamon and peanut butter may sound strange, but it is amazingly good! This is one of my favorite cookies. They are moist and delicious. You don’t have to refrigerate the dough, so they are quick to make. You will love this cookie!

Ingredients:

¾ c. Salted Butter

½ c. Sugar

½ c. Brown Sugar

1 Egg

½ c. Creamy Peanut Butter

1 tsp. Vanilla

½ tsp. Salt

½ tsp. Baking Soda

1 Tbl. Cinnamon

1 ¼ c. Flour

2 c. Chocolate Chips

Preparation:

1. Preheat oven to 375°F.


2. In a mixing bowl, cream the Butter, Sugar, and Brown Sugar. Cream it very well.


3. Add the Egg and mix well. Add the Peanut Butter and mix well.


4. Add the Baking Soda, Salt, Cinnamon, and Vanilla and mix well.


5. Add the Chocolate Chips and mix well.


6. Add the Flour and mix well.


7. Grease a cookie sheet and place balls of cookie dough on the sheet. Here is a link for the baking sheet that I love and use. It is bigger so I can bake cookies so much faster!


8. Bake for 7-10 minutes, or until lightly golden brown. Let the cookies sit on the pan for 4-5 minutes, then move them to a cooling rack.


9. Enjoy them fresh and warm, or cooled. They are both delicious!

Alterations

  • These cookies can be frozen. They also stay fresh for about a week.

  • You can add ½ c. Chopped Pecans or Walnuts to these cookies if you prefer.
