These cookies are so delicious! I tried Crumbl’s cookies and I thought they were good, but they lacked flavor. I wanted the cookie base to have a lot more blueberry flavor to it so I decided to make it my own. This is a copycat recipe, but it is an improved recipe. These cookies are simple to make and have tons of flavor! The cookie itself is soft and moist with tons of blueberry flavor. It is topped with Whipped Cream and Blueberry Pie Filling. These cookies have to be refrigerated, but if you are taking them to share with people, they won’t last that long. It is like eating a blueberry muffin and pie in one bite. These cookies are perfect for spring and summer. If you are a blueberry lover, then this recipe is for you! I hope you love these cookies as much as we do!

Ingredients:

Blueberry Cookies

1 c. Salted Butter

1 c. Sugar

2 Eggs

1 tsp. Baking Powder

½ tsp. Salt

1 tsp. Vanilla

16.9 oz. Blueberry Muffin Mix with Drained Blueberries

2 ½ c. Flour

Bake at 350°F for 10-11 minutes


Whipped Cream

1 c. Heavy Whipping Cream

¼ c. Powdered Sugar

½ tsp. Vanilla


Topping

1 can Blueberry Pie Filling

Preparation:

1. Preheat the oven to 350°F.


2. In a medium-sized mixing bowl cream the Butter and the Sugar.


3. Mix the Eggs in well.


4. Add the Baking Powder, Salt, Vanilla, and the Blueberry Muffin Mix and Drained Blueberries. Mix well.


5. Add the Flour and mix well.


6. Grease a baking sheet. Roll balls of dough about 1 ½ inches in diameter. Bake the cookies for 10-11 minutes. Let them sit on the baking sheet for 5 minutes, then move them to a cooling rack. Let the cookies cool completely. Click here for the extra large baking sheets that I use and love!


7. In a mixing bowl mix the Heavy Whipping Cream until it is thickened. Add the Powdered Sugar and the Vanilla. Mix in. Then spread the Whipped Cream over the cookies.


8. Spoon Blueberry Pie filling over the top of the Whipped Cream.


9. Serve and enjoy!
