These cookies are one of the best cookies I have ever eaten! I tried Crumbl’s Pistachio Gelato Cookie and it was good, but this version is a lot better! These cookies are soft and flavorful with the best Pistachio topping! These cookies melt in your mouth. They are simple to make and will be a huge crowd pleaser. If you love Pistachio, then you will love these cookies! I hope that you love this recipe as much as I do.

Ingredients:

Cookies

1 c. Salted Butter

1 c. Brown Sugar

¾ c. Sugar

2 Eggs

2 tsp. Baking Powder

1 tsp. Salt

2 tsp. Vanilla

3 ½ c. Flour

Bake at 350°F for 10-12 minutes


Pistachio Topping

1 3 oz. package Pistachio Instant Pudding

1 c. Milk

8 oz. Cool Whip

Chopped Pistachios for the topping

Preparation:

1. Preheat the oven to 350°F.


2. In a medium-sized mixing bowl cream the Butter, Brown Sugar, and the Sugar.


3. Add the Eggs and mix well.


4. Add the Baking Powder, Salt, and the Vanilla and mix well.


5. Add the Flour and mix it well.


6. Grease your baking sheet and roll the dough into 1 ½ inch balls of dough.


7. Bake for 10-12 minutes. Leave them on the pan for 4-5 minutes. They will continue to cook. Remove them from the pan and let them finish cooling completely. Click here for the Extra Large Baking Sheets that I love!


8. Mix the Pistachio Pudding and the Milk. Then add the Cool Whip and mix it up well.


9. Frost the cookies and sprinkle crushed Pistachios over the top.


10. Serve and enjoy!
