Frog Eye Salad
While I was growing up this was one of my favorite salads. We would make it every time we went had a family gathering, bridal shower, or any big event where there was a meal. This is a very popular salad in Utah. It is a pasta salad, but it could also be classified as a fruit salad. It is sweet and has lots of fruit in it, and it is delicious! It also makes a very large salad, so that is probably why we always made it. My family loves this salad and often requests that I make it for holidays or special occasions. If you don’t want a huge salad, you can always cut the recipe in half. You can make this to take to church gathering, potlucks, or family gatherings. I hope you enjoy this recipe as much as I do!
Preparation:
1. Boil the Pasta according to package directions. I usually boil mine a little longer because I like it a little softer for this salad, but cook it according to preference. Drain the pasta and place it in a large mixing bowl.
2. In a sauce pan combine the Sugar, Pineapple Juice, Lemon Juice, Egg, and the Salt. Stir it until it is smooth, then whisk in the Flour. Cook I on a medium heat until it has thickened into a sauce consistency. Then add the Butter and stir it in.
3. Pour the hot sauce over the noodles and stir it to completely coat the noodles. Refrigerate the noodles to allow them to cool completely.
4. Drain the Mandarin Oranges and the Pineapple. Add them to the salad. Add the Grapes and the Marshmallows.
5. Add the Cool Whip and stir to combine.
6. Serve and enjoy!
