This is a very hearty breakfast casserole! If you are looking for a cheap and filling breakfast, then this one will be your answer. This recipe is also delicious! I love a good and hearty breakfast to start my day. I also like to make a big breakfast on the weekend for my kids to have a home-cooked breakfast before they go to school. I am not big on cereal in the morning, although we eat it once in a while. I like to make a couple of things on the weekend so that the week is simple and they have good food to eat quickly. The kids enjoy this recipe and I keep it in my rotation. I hope you love this recipe as much as we do!

Ingredients:

10 Eggs

1 c. Milk

2 c. Bisquick Mix

1 c. Sour Cream

5 c. Frozen Hash Browns, thawed

4 c. Shredded Cheese

1 c. Cottage Cheese

1 c. Bacon Bites

1 bunch Green Onions, chopped

1 tsp. Garlic Salt

Shredded Cheese for the topping

Bake at 325°F for 60-70 minutes

Preparation:

1. Preheat the oven to 325°F.

2. In a large mixing bowl combine the Eggs, Milk, Bisquick, and the Sour Cream. Mix well until it is smooth and creamy.

3. Add the Hashbrowns, Shredded Cheese, Cottage Cheese, Bacon Bites, Green Onions, and the Garlic Salt. Stir together until it is combined.

4. Spray a 9x13 glass baking dish. Then pour the mixture into the baking dish and spread it out evenly. Then top with Shredded Cheese.

5. Bake for 60-70 minutes, or until an inserted toothpick comes out clean.

6. Serve and enjoy!
