Instant Pot Pork Loin with Potatoes and Carrots

This is a meal that I grew up eating when we went camping. My family loved to cook in a Dutch Oven and this was one that we always cooked. It took about 3 hours to cook and always tasted so good, but I don’t typically have 3 hours to cook a meal. I need them to be quick and simple for a busy and growing family. I decided to try it in the Instant Pot and it took a fraction of the time and tasted just as good! My family loves this meal and always eats it quickly. The pork roast is tender and moist and the carrots and potatoes are cooked perfectly. If you are looking for a quick and easy dinner that is filling, then look no further. I hope you love this recipe as much as we do!

Ingredients:

4 lb. Pork Loin Roast

5 lb. Red Potatoes, cut in half

2 lb. Carrots, sliced

2-3 tsp. Garlic Salt

1 c. Water

Preparation:

1. Turn the Instant Pot onto the Sauté mode. Let it heat up, then add the Olive Oil. Sprinkle Garlic Salt over the Pork Roast and place the roast in the Instant Pot. Let it cook for 3-4 minutes on all 4 sides.


2. Add the Water. I put my roast on top of the rack that goes in the Instant Pot. Place the lid on the Instant Pot and put it on High Pressure for 10 minutes. Do a quick release when it is done. Click here for the Instant Pot that I use and love!


3. Chop the Potatoes and Carrots while the roast is cooking. Add the Potatoes and Carrots around the roast in layers. Sprinkle with Garlic Salt in between layers.


4. Close the lid and put it on high pressure for 8 minutes. Do a quick release when it is done. With a baster, spread the juice at the bottom of the pot over the top of the vegetables.


5. Serve and enjoy!
