Italian Pasta Salad
This pasta salad is one of my favorites! It has so many flavors and colors, and it has just the right amount of crunch to it. It is so much better than the salads that you buy in the store. This recipe makes a big salad which makes it great to take to a potluck or a barbeque. If you want to make it for your family, I suggest you cut the recipe in half.
Ingredients:
Salad
16 oz. Twisty Pasta
2 c. Zucchini Chopped
1 c. Pepperoni
1 can Large Black Olives
6 oz. Swiss Cheese
1 Purple Onion
1 Package Cherry Tomatoes
Dressing
9 Tbl. Olive Oil
6 Tbl. White Wine Vinegar
1 ½ tsp. Minced Garlic
¾ tsp. Ground Pepper
¾ tsp. Salt
2 tsp. Basil
2 tsp. Oregano
¾ c. Parmesan Cheese
Preparation:
1. Boil a pot of water. I like to add 2 tsp. of salt to my boiling water. Add your pasta and cook it according to the package directions.
2. Drain the pasta and set it aside to cool.
3. Chop your Zucchini in small bite sized pieces.
4. Chop the Pepperoni into small strips and separate.
5. Chop 1 can of large Black Olives into small circles.
6. Slice the Swiss cheese into small strips, or grate it if you want to go quicker.
7. Dice 1 Purple Onion into small pieces.
8. Cut Cherry Tomatoes in half.
9. Add the Pasta, Zucchini, Pepperoni, Olives, Swiss Cheese, and Onion in a large bowl.
10. Make the dressing. In a mixing bowl combine the Olive Oil, White Wine Vinegar, Minced Garlic, Pepper, Salt, Basil, Oregano, and Parmesan Cheese. Mix this together well and pour over the salad. Toss the salad to make sure that the dressing coats everything.
11. Serve and Enjoy!
