Key Lime Pie
This is one of my favorite pie recipes! Several years ago, I was at a restaurant and I ordered Key Lime Pie for dessert. I loved it because it was so different from the recipes I had eaten in the past. It was delicious! I have looked high and low for a recipe that is similar and haven’t ever found one. So, I decided to make my own. This recipe is so simple and delicious! You can eat it frozen, or you can eat it cold from the fridge. I like it both ways. You are going to love this recipe! It is going to be on the menu every Thanksgiving at our house from here on out!
Preparation:
1. Preheat the oven to 375°F.
2. Place the Shortbread Cookies in a food processor, or a blender and mix it until it is fine crumbs. If you don’t have one you can place the cookies in a Ziplock Bag and mash it with a rolling pin.
3. Place the Cookie Crumbs in a mixing bowl. Add the Sugar and the Melted Butter. Stir it until it is mixed well. Then press the cookie crumbs into a pie dish to make your pie crust.
4. Bake the crust for 7-8 minutes. Remove it from the oven and let it cool completely.
5. In a mixing bowl, cream the softened Cream Cheese and the Sweetened Condensed Milk. Mix it until it is smooth and creamy.
6. Add the Lime Juice and mix it well.
7. In a separate bowl, mix the Whipping Cream until it is thick. Then mix the whipping cream into the Cream Cheese mixture. Add a few drops of Green Food Coloring if you would like.
8. Spread the Pie Filling evenly in the crust.
9. Refrigerate for 3-4 hours, or freeze for 2-3 hours before serving. You can serve it frozen, or you can serve it cold depending on your preference.
10. Garnish with Whipped Cream.
11. Serve and enjoy!
