This is a delicious oatmeal cookie with a marshmallow filling. You are going to love these cookies! My kids absolutely love them. These cookies are simple to make and will leave you wanting more.

Ingredients:

Cookie Dough

¾ c. Salted Butter

2 c. Brown Sugar

2 Eggs

½ tsp. Salt

1 tsp. Baking Powder

1 tsp. Vanilla

1 tsp. Cinnamon

2 c. Quick Oats

2 tsp. Baking Soda

3 Tbl. Boiling Water

2 ½ c. Flour


Frosting

½ c. Salted Butter

1-7 oz. jar Marshmallow Fluff

1 tsp. Vanilla

1 ¼ c. Powdered Sugar

Preparation:

1. Cream the Butter and the Brown Sugar and mix it really well. Add the Eggs and mix it well.


2. Add the Salt, Baking Powder, Vanilla, Cinnamon, and the Oatmeal. Mix it well.


3. Mix the Boiling Water and the Baking Soda in a separate small bowl. Then add it to the cookie dough.


4. Add the Flour and mix it well.


5. Refrigerate the dough for 2 hours.


6. Preheat the oven to 375°F.


7. Grease the cookie sheets and roll your cookies into 1 ½ inch balls of dough. Make sure they won’t touch because they will spread quite a bit.


8. Bake the cookies for 8-9 minutes, or until they are lightly golden brown. Cool them completely on a cooling rack.


9. Make the frosting. In a small mixing bowl combine the Butter, Marshmallow Fluff, Vanilla, and the Powdered Sugar. Mix it really well.


10. Frost one half of the cookies, and put the other half on top to make a cookie sandwich.


11. Serve and enjoy!
