This is a light and delicious dessert that is so simple! It is a crowd pleaser! Whenever I make this for a potluck it disappears pretty quick. I also love that you can change the flavor. You can use pistachio pudding (my personal favorite), chocolate, or lemon pudding depending on the time of year, or your preference. You can’t go wrong with any of them.

Ingredients:

1st layer:

1 c. Flour

1 c. Pecans

1 Tbl. Sugar

½ c. Salted Butter


2nd layer:

1 c. Powdered Sugar

8 oz. Cream Cheese, softened

2 c. Cool Whip, thawed


3rd layer:

3 small pkg. of Instant Pistachio Pudding

4 1/2 c. Milk


4th layer:

Small container of Cool Whip, thawed

Preparation:

1. Preheat the oven to 375°F.


2. In a mixing bowl combine the Flour, Pecans, Sugar, and the Butter. Use a hand mixer to mix it. It will be like a crumble.


3. Grease the bottom of a 9x13 glass baking dish and press the flour mixture in the bottom until it is even.


4. Bake at 375° F for 15 minutes. Remove from the oven and let it cool completely.


5. In a mixing bowl combine softened Cream Cheese, Powdered Sugar, and the thawed Cool Whip. Mix till it is smooth and creamy. Spread this on top of the crust.


6. Mix 3 small packages (3.4 oz.) of Instant Pistachio Pudding with 4 1/2 cups of Milk. When it has thickened then spread it on top of the cream cheese mixture.


7. Spread the remaining Cool Whip on top of the pudding.


8. You can top with chopped pecans, or shredded chocolate if you are using chocolate pudding. Get creative! Or you can just leave it plain.


9. Refrigerate for an hour and serve!

Alterations

  • You can use Chocolate pudding, lemon pudding, or pistachio pudding. You can top with chocolate shavings or chopped pecans.
