I love soup! I am always ready for soup weather so that I can make endless delicious recipes for dinner. I love it because it is tasty and makes me feel warm and cozy. This is a delicious soup recipe that resembles white chili, but without tons of beans. It is a creamy soup with tender veggies and chicken. It has tons of good flavor and is good with tortilla chips, sour cream, cheese, avocado or salsa. You can eat it with one or all of these sides. If you are not a huge bean lover, this is a good option for you. It has refried beans in the soup, but it actually helps it to be creamy. My family devours this soup whenever I make it. I always make sure I have plenty of tortilla chips on hand because they like to dip them in their soup. This recipe is simple to make and is a good, healthy option. I hope you love this recipe as much as we do!

Ingredients:

2 lb. Chicken

½ Onion

1 Tbl. Olive Oil

2 Carrots

3 c. Water

1 Tbl. Beef Bullion

14.5 oz. can Petite Diced Tomatoes

22 oz. Frozen Corn

2 ½ Tbl. Taco Seasoning

1 tsp. Salt

¼ tsp. Pepper

16 oz. can Refried Beans

1 c. Half and Half Cream

Preparation:

1. Cut the Chicken into bite-sized pieces. Chop the Onion and the Carrots. In a soup pot combine the Olive Oil, Chicken, and the Onion. Cook it on a medium heat until the chicken is mostly cooked through. Add the Carrots and finish cooking the chicken.


2. Add the Water, Beef Bullion, and the Diced Tomatoes. Bring it to a boil and cook it until the Carrots are tender.


3. Add the Corn, Taco Seasoning, Salt, Pepper, and the Refried Beans. Stir it until it is smooth.


4. Add the Cream and stir.


5. Serve and enjoy!

Alterations

  • You can add any kind of toppings you like....avocado, sour cream, salsa, cheese,tortilla chips. It is all yummy!
