Stew and Dumplings
This is one of my favorite fall or winter-time soups. I love the flavor of it and I love the warmth it gives me. This is one of my ultimate comfort foods. This soup is very hearty and filling. My family used to eat it when we were camping in the Wind River Mountains in Wyoming. It always got so cold at night and this was one of my favorite meals. I still make it whenever I am feeling cold and need a good meal. It is simple to make and doesn’t take much time.
Preparation:
1. Cut the Chicken Breast into bite-sized pieces.
2. Dice the Onions. Saute the Onion and the Chicken in the Olive Oil in a large soup pot. Cook it until the chicken is cooked through completely.
3. While the chicken and onions are cooking, dice the Potatoes and the Carrots.
4. Add the Water, Carrots, Potatoes, Chicken Bullion, and the Pepper. Cover your pot and cook it until the vegetables are tender, but not mushy.
5. While the soup is cooking make the Dumplings. In a mixing bowl combine the Flour, Baking Powder, Parsley, Basil, and the Salt. Stir it together to mix the dry ingredients. Add the Milk and the Oil and stir it together until it is mixed well.
6. Form the dumpling dough into balls about 1 ½-2 inches in diameter.
7. When the soup is cooked through, drop the dumplings into the pot, spacing them evenly. Don’t stir the soup, just cover the pot and let the soup boil for 10 minutes.
8. Remove the soup from the heat. The dumplings should be cooked through, and will have risen to the top.
9. Serve and enjoy!
