This is an amazing recipe that my family loves! This is one of those comfort foods that I love to make on a cold day. It is hearty and filling, and so delicious! This soup is packed with flavor! I love it because it takes about 40 minutes to make, but I only have to spend about 15 minutes actually making it. It is a great meal for a busy night. I always know a recipe is just right when I see the kids attempting to lick their bowls, and they all have tried it😊 I hope you love this heartwarming recipe as much as we do!

Ingredients:

½ c. Onion

1 Tbl. Minced Garlic

1 lb. Italian Sausage

2- 15 oz. can Petite Diced Tomatoes

4 c. Water

3 Tbl. Knorr Chicken Bullion

1 Tbl. Basil

¼ tsp. Pepper

9 oz. Cheese Tortellini

2 c. Fresh Spinach

Mozzarella or Parmesan Cheese for garnish

Preparation:

1. Chop the Onion and mince the Garlic. Set aside.


2. In a large, heavy-bottom soup pot cook the Sausage until it is cooked through. Then add the Onion and the Garlic and cook it until the onions are tender. Drain the grease and return to the pot.


3. Add the Tomatoes with the juice, Water, Knorr Chicken Bullion, Basil, and the Pepper. Bring it to a boil. Reduce the heat to a simmer and let it simmer for 20 minutes, covered.


4. Add the Tortellini and the Spinach and let it cook for about 10 minutes, or until the pasta is tender.


5. Serve with Mozzarella Cheese or Parmesan Cheese (or both). Enjoy!
